Anaheim Pepper

Peppers come in a myriad of different shapes, sizes, colors and flavors. The sweet peppers, such as the Bell, are excellent for salads, hors d'oeuvres, stuffing and stir-fry dishes. The kick of other peppers ranges from mild, green Cayenne used in chili rellenos, to searing hot, like the red, fully matured Cayenne pod or the Tobasco type. Pimento types are found in the middle of olives and in cheeses. Plants need warm temperatures. In cool summer areas, plant against south- or west-facing walls and mulch with black plastic. Harvest sweet peppers green when they stop enlarging, or leave them to mellow their flavor and ripen to red, yellow or orange. Harvest hot peppers when they are yellow or red. Pick Jalapenos green. Pests and diseases are seldom a problem.

This vigorous plant's fruit are mildly hot Peppers up to 8 inches long and 2½ inches wide. In the green stage, use them for chili rellenos or a mild green sauce. The dried red Peppers are used in chili powder and paprika. Takes 74 days from seed to harvest.
