A versatile addition to any kitchen garden, it can be used to add zest to salads, as a delicate sprout, or as a coffee substitute. For coffee substitute, dry and roast roots. For blanched sprouts, force young shoots. Edible leaves add color and spice to salads. This group includes such gourmet specialties as Belgian or French Endive and red-leafed Radicchio as well as a widespread, blue-flowered weed, Cichorium intybus. Chicory does best in rich soil and full sun, but may be difficult in hot-summer areas. Propagate by seed in autumn or spring. |

A fine curled type with dark green, deeply cut and curled leaves, it is slow to bolt. Handles some heat, fall rain, and frost.
