Horseradish
This hardy vegetable grows best with a long, warm, growing season and cold winters that help form the large, flavorful roots. For sauce (often used with meat), grate peeled roots, and mix with white or distilled vinegar, salt to taste. Refrigerate, and it keeps for a few weeks. In spring, start as root cuttings. Plant nearly horizontal, 2 to 3 inches deep, with large end of root up. Give plenty of water, but no not fertilize heavily. Harvest after several weeks of hard frost for best flavor. Watch for all pests that effect Horseradish's cousin, Cabbage. |

In most areas, it grows year after year from small roots left after harvest. Harvest roots every hear or they become too tough to eat.
