Horseradish
| This hardy vegetable grows best with a long, warm, growing season and cold winters that help form the large, flavorful roots. For sauce (often used with meat), grate peeled roots, and mix with white or distilled vinegar, salt to taste. Refrigerate, and it keeps for a few weeks. In spring, start as root cuttings. Plant nearly horizontal, 2 to 3 inches deep, with large end of root up. Give plenty of water, but no not fertilize heavily. Harvest after several weeks of hard frost for best flavor. Watch for all pests that effect Horseradish's cousin, Cabbage. |
An Old World variety, it is grown for its fleshy, white, pungent roots. The young leaves add zip to salads.
